Counting my eggs...

I work at a gravel plant with 8 grown MEN.... HUNGRY men... I was trying to figure out a way to make them a decent breakfast, especially a warm one with winter coming up.  We have to be frugal around here as well as conserve time.  I searched and searched and I came across "Egg McMuffins at Home" recipe.  I am not a fan of English Muffins... so I just used Biscuits... but here's how its done... might want to write this down... its extremely DIFFICULT...*giggle giggle*

First, spray each hole in the muffin tin that you are going to have an egg in with non-stick spray.  Crack an egg and empty it into an empty  hole. 
Set the oven to 350 degrees.
Salt and pepper the eggs according to your liking, then add any other toppings you wish to add such as cheese etc. 
**You can also crack all the eggs into a bowl, then scramble and add in tomatoes, onions, cheese etc to make individual omelets. **
Check on them periodically because all ovens vary.  Some like their yolks runny and others prefer them solid.  Cook to preference.
Take the tray out once they are cooked to preference and let them stand for about 5 minutes to all the eggs to sorta harden up, then take a spoon and pop them out. 
If you are using biscuits, you can cook the biscuits before the eggs, after the eggs, or while the eggs are in there.  Its totally up to you. 

This was by far the easiest way to make a large quantity of eggs at one time.  Now I'm on an adventure to see what else I can cook in a muffin pan!!
